in reading the threads on the board, i have found out that most of us like to eat.
so in the spirit of the memorial day summer kickoff, what are some of your favorite foods to eat/cook while at the beach or a resort.

Well I kiked off the Memorial Day Weekend by grilling Chicken Kabobs with Tomatoes, mushrooms , onions & peppers....marinated in an Italian vinigrett with olive oil, last night when I got home from work.

I know it sounds wierd, but Fish Tacos and Limeade or a float mde with lime sherbet (sp?) and 7-up. Yum!

Anything and everything you can cook on a grill. Seriously I think my wife thins the grill is about the best thing she ever bought me! I tell her just buy stuff to put on the grill and I will do all the cooking. LOL! Usually just burgers ribs steaks or chicken but I am going to get into the more exotic stuff this summer. I need to find a good BBQ cook book anyone know of one? I have dome corn on the cob while cooking the meats as well so I have learned a few things. It is a gas grill and I know to BBQ purists this may be a bit non-traditional but you can't beat it for firing up and being ready to cook on a moments notice.

NudeAl do a search on google, just type in grilling, or grilling recipes. I think getting hubby a grill is great, I don't have to spend so many hours over a hot stove cooking a meal. Besides, hubby does a great job at grilling. I am of a vegtable person, love salads, and I do not eat that much red meat, most fish or chicken. Love fresh Alaskan salmon or haddock on the grill and a scrumptious green salad.

Got to be BBQ, because the summer is the only season I can spend a lot of time in my backyard ! Since I cook for the family, BBQ is easy to fix up a dinner. I can grill meat (chicken, steak, pork chops, or parwns) at the same time I am fixing up veggies and carbs (pasta or rice) in the kitchen.
By the way, how many of you are on Atkins (or other similar low-carb) diet ? I don't do it because I love my carbs !

I lost my seventy pounds (used to be 350) by doing the opposite: All complex carbs (McDougall). What ever works!

Basically, McDougall's Diet is a lot like the Pritkin Diet. No fat, no sugar (in it's pure form no meat or milk) but lots of complex carbohydrates, (beans, potatoes, whole wheat bread etc), vegetables, and fruits. The basic premise is that you cannot eat enough Complex Carbohydrates to gain weight (they fill you up). And because they take so long to digest, your blood sugar doesn't spike. (Good for us diabetics!)It was developed by a Seventh Day Adventist doctor.

I've been on Weight Watchers for the past 3 months, and have lost 47.4lbs. so far. It's the easiest diet program I've ever been on. And I've been on most of them at one time or another. The problem with most diets is that you have to give up something, to lose weight. Not so with Weight Watchers. You can have anything you want. You just have to adjust the portion size to stay within the limits that are set for your current weight. My only problem is I sometimes have trouble eating all the food I'm required to each day. I have bagels with cream cheese, ice cream, lobster, pasta, cheese, and many other foods that most diets forbid.

The best part about Weight Watchers is, it re-educates you on proper, healthy eating habits. Most people complain that after they stop following the diet they're on, they gain all the weight they lost and more. Statistically, there is much less weight gain after reaching your goal on Weight Watchers. The reason is, as I stated on my previous post, that you relearn how to eat properly, without denying yourself anything. It's a more natural way of life.

We too like anything cooked on the grill...well almost anything!
During the summer we like eating lots of salads and fruit. One of my favorites is fruit on top of vanilla ice cream sprinkled with granola.

Started the summer here by grilling steak & mushrooms. My wife has declared that I'm the designated cook during the summer. Also love fruits (especially peaches & pineapple). Ice cream & Italian ices are also enjoyable summer desserts.
